Mutant potato starch

In this project, funded by Kartoffelafgiftsfonden and Kartoffelmelcentralen, we investigate some new potato mutants with expected effects on starch structure and functionality. The potato lines are natural mutants and we extract starch from these lines for downstream analusis of molecular structure and physical and rheological behaviour.

The starches will be enzymatically treated to further impropve functionality and process stability.  Dietary health properties related to GI and so called resistant starch will be evaluated.

The site of the mutation is not known and we wil investigate enzyme capabilities in the potato tubers to assess possible enzymes affected by the mutation. Knowledge from the project can be directly used for new starch bioengineering strategies of the potato tuber.
