Clean modification of starch

Clean modification of a wide variety of different types of granular and gelatinised starches with designer enzymes provided by industrial partners and international collaborators. The project generates novel types of industrial starches, especially, health-promoting and stabilised starch, and knowledge about enzyme mechanisms on solid and soluble carbohydrate substrates.
