My research involves the search and discovery of antibacterial and other bioactive compounds from fermented seed meals produced by our industrial partner in the project, European Protein A/S. Focus is on fermented rapeseed/canola meal, which seems to entail beneficial effects on gut (and general) health when fed to livestock such as pigs and poultry. I perform different in vitro assays to evaluate the antibacterial activity of fermented seed meals. Metabolite analyses of meals and samples collected from animal experiments are performed using LC-MS and GC-MS.
